Quinoa is bland tasting to me, and I thought a can of soup might perk it up. The quinoa absorbed the spicyness of this soup though. Next time I might also add some chopped fresh Jalapeno to it.
A lighter delicious alternative to a heavy mayonnaise based potato salad. This salad retains the potato peel and all it's goodness. It's also a great base to experiment and customize for your own vinegrette potato salad recipe.
Plain couscous made with water isn't too appetizing, but mix it up with some veggies and chicken and you've got a delicious meal.

Quickie way to make taco meat
Great quick tuna recipe for a wrap or sandwich, or just for dipping carrot slices or chips into. The Bread and Butter pickled jalapenos mix (no pickles in it, it's just how the jalapenos are done) is awesome stuff! Buy it if you see it.

I like the challenge of my husband saying we have nothing to eat, and then proving him wrong with something healthy and delicious. When he says we don't have food in the house, I know we have at least 4 weeks without having to repeat a meal. These are recipes I've invented to prove him wrong.
