Easy-Lean - Crock Pot Mu Shu Pork !

Inspired by a local AWESOME restaurant - I had a few beautiful (no antibiotic/hormone/etc.) boneless center cut pork chops and forgot to make my trusty peanut curry marinade the night before. What to do ? Attempt one of my favorite dishes - Mu Shu Pork ! Here's the how to:

Equipment Needs: Crock pot (or low and slow via Dutch Oven)

Turkey Meatloaf with Mushroom Gravy

Looking for that comfort food taste with a lighter kick, I use turkey as a meat substitute all the time so I whipped this up for a nice light but warm and comfy plate of yummy.

P.S. I don't use any fillers like crumbs, bread or eggs.. I use veggies to keep the loaf moist and tasty.

Lighter Chicken Stroganoff

After a busy weekend of dealing with family and being away from home, I was craving a very homey, belly warming dinner to warm my soul and be a "missed you" kiss for my husband.. but still light enough to not kill the calorie bank.

My husband loves my beef stroganoff - so this is a riff on my own beef recipe but using some pre-made (bought) rotisserie chicken for a quick fix. I served this with some super yummy and creamy parmesan whipped russet potatoes.

Was a perfect comfort meal bowl.

I was home sick today and while Pinterest'ing my sickness woes away debating whether I would be trekking to work, I found this picture of Lasagna Soup (original recipe featured on this foodie blog - www.joanne-eatswellwithothers.com/2012/10/

But the recipe (while very nice and simple) didn't quite ring of "LASAGNA" to me.. in fact it was missing the key part of a good gooey layered treat.. the ricotta cheese and the fresh "mozzarel!".. and then I thought of another recipe featured in this month's Bon Appetit for Ricotta Gnudi and Pomodoro sauce (www.bonappetit.com/recipes/2013/02/ricott
a-gnudi-with-pomodoro-sauce) and this recipe was born... a warm bellyful of lasagna flavors that was perfect to warm my body and soul.

Mexican Style - Low Fat Lasagna

Another good staple for the freezer, and very tasty -I make this recipe into two casseroles (since it's just me and the hubby) we have 1 for dinner and some leftovers and then another one in the freezer waiting for the next time we're looking for a low fat casserole-y type of dish. You can modify this to add veggies or use turkey or even lean ground beef. Add more spice, or take it out, this is a very modify-friendly dish.

Lean Red Wine Beef Stew

I’ve been a northeasterner my whole life so it might seem obvious that I would have a growing arsenal of bubbling savory delights that can simmer on the stove or in a crock pot for hours… This is a riff on a recipe that I picked up from one of the Food Network chefs Dave Lieberman, I took his recipe for Red Wine Beef Stew with Potatoes and Green beans and tweaked it for our tastes and also for a lighter version. This is a no flour recipe, rather I use the potatoes as a thickener and I use Flank Steak for a leaner cut of beef.
Ingredients: Note: I make a larger batch that Dave’s recipe calls for, this recipe freezes and reheats really well hence it is usually a staple of my tri-annual Cook-A-Palooza - Make a lot and save yourself some time later..

Quick and Easy Grilled Chicken Summer Lasagna

What do you do if you have chicken waiting to be grilled but no good fixins' to fix it with ? Make a quick veggie filled lasagna !

Over the weekend I was in a cooking conundrum.. unexpected warm weather was making me want to grill something, but the need/want for some comfort food led me to want something like lasagna.. but wanting to make sure I got the veggy fix in for a "cheat full" weekend of fun food out... this was the compromise that totally hit the spot.

You could totally omit the chicken - however it did give the lasagna a summery taste.. maybe grill the zucchini and the leeks instead !

Escarole & White Bean Soup

In trying to save money and eat healthier, experts and cooks alike recommend having a "no meat" meal at least once a week, so I've been on the hunt for satisfying no-meat inspirations to satisfy my poulty loving husband and my own meat lover's soul. This soup was a last minute one pot wonder inspired by a recipe I saw a few years ago for a post thanksgiving veg out in Bon Appetit (http://www.bonappetit.com/recipes/2009/02
/kale_and_white_bean_stew) here is my interpretation of the recipe to get a similar feel. This soup is packed with nutrition and also will satisfy any meat lover for a no-meat weeknight meal !

Good Morning! Veggie Frittata

This is one of my favorite guilt free breakfasts, you can substitute any combination of great veggies like peppers, or mushrooms, even broccoli. I love leeks and asaparagus (which both happen to be great for us trying to lose some poundage) so they are typically my go to's for this. Don't like potatoes? Sub a nice slice of multi-grain toast for the potatoes. I add a 1/2 cup of fresh fruit and a hot cup of coffee for the perfect post work out breakfast! Enjoy !

Shrimp Fillo Cups w/ Creme Fraiche

A great appetizer and can be prepped ahead and served at room temperature.

This recipe calls for the use of Fillo Cups, but you could just as easily keep the shrimp whole, serve with crustinis or rustic flat bread and keep the creme fraiche mixture on the side for guests to serve themselves.

Stuffed Portobello Mushrooms

Kind of what would happen if you took a bun-less turkey burger and it went on a date with a lean turkey meatloaf ! Super Easy! Nice with a Salad for lunch or dinner !
