I created this recipe by looking in the fridge on the last day before Grocery Day and saying, "I've got a party to go to--what in here will make a salad?" Happily, what I came up with got many compliments!
Adapted from/Inspired by a recipe from Rachael Ray's Big Orange Book, this noodle dish is full of veggies, full of flavour, and feeds a crowd!
This is an adaptation of a vegan lentil burger recipe I found here at SparkRecipes. To make this vegan, simply omit the oil and use non-stick cooking spray or a non-stick skillet.
