This recipe is a makeover of my mom's recipe. I love her dearly - but can do without the extra fat, carbs and calories. This recipe still has the same great taste and all those memories of eating it as a kid - but much healthier.
This recipe brings me back to those cold winter days when you just needed a little something hot in your tummy. My mom used to make this casserole in her favorite green glass bowl. She'd mix it all together and top it with a few extra tots for the top. My brothers and I would see the bubbling casserole - but just couldn't wait to dig in. We'd burn the rooves of our mouths from that first bite - but well worth it.
I've given my Grandma Loretta's German Potato Salad an extreme makeover. This recipe is nutricianally healthier and portion controlled. I've made this recipe with Splenda - it didn't quite taste the same to me but my family really didn't notice.
This is my Grandma Loretta's German Potato Salad recipe. It was a staple food as I grew up. It was very inexpensive to make and a great comfort food that would last at least two meals for the family.
When it's time to harvest all of those tomatoes ~ this is one of our favorite stewed tomato recipies. You can add this recipe to your favorite casserole or soup. Our favorite ~ just add a little cream to this recipe and you have the perfect tomato soup.
