Rachel Ray's 30 minute meals. Served with Ricotta, Spinach & Ham Stuffed Chicken Breast Marsala
This recipe was originally from the Fix-It and Forget-It Cookbook, however, I retooled this for a smaller crockpot, (approx. 4 quart, round slowcooker.)
This is a great way to get your daily vegies with just a little extra flavor
My absolute favorite thing to eat on vegetables is Hidden Valley Ranch Dressing made with Best Food mayo (and not the light stuff.) This makes two tablespoons 14 grams of fat and completely defeats the purpose of eating the vegetables. I have searched everywhere for a great low-fat ranch dressing recipe and they have all left me flat,(well, actually, rather round.) Until I discovered Greek Yogurt! Hope you enjoy this recipe as much as I do.
This pasta salad goes great as a side dish to most fish dishes. I serve this with a burbon salmon from Cookinglight.com that is just fantastic and still lets me meet my food goals for the day.
Recipe adaptation from the American Heart Association Cookbook. The recipe originally called for 1 tbsp of chopped bell peppers and fat-free or light mayo.
This is a great crockpot recipe for those that work long days. Smells up the entire house!
These are great on scrambled eggs, in salads, to top tomatoes with a little blue cheese and just about any other dish that could use a few grilled onions.
This recipe is so easy to make and so delicious. Using sea salt makes this recipe a little lower in sodium than your typical guac.
