I found this recipe online and made it with a few conversion for less calories.
Cut tops of peppers and dice the little bit of pepper from the tops for your saute mixture. Prepare Cousous according to package, saute veggies, mix all together. Stuff peppers with the cousous and veggie mix and cheese. Bake

This is a regular at our house. I needed to know the nutritional value so I would know how many slices I could enjoy and stay on program.
I love Quiche made with a real pie crust. I found a frozen curst with the lest amount of calories. I also used low fat/calorie cheese. I am sure you can substitue your favorite ingredients with the cheese and egg. ie: bacon bits, sausage, mushrooms etc. The other ingredients (in this case mixed veggies) amount to one cup.
