A tasty and fairly healthy dish. Easy to make and great for a lenten meal.
This easy chicken recipe can be made with any type of chicken. I prefer to use quarters, which is the thigh and drumstick attached.
This is an excellent recipe and very healthy. It is a take on the kind Baja Fresh serves. It tends to taste better when the flavors have time to blend, so it's best to make it at least 4-5 hours before needing it. It's great as a salad dressing, mixed with rice or cottage cheese.
I have added other veggies to this as I pulsed and made a cole-slaw type of salad as well.
This is a delicious meal for any night of the week.
I made these for a lenten Friday meal and they were absolutely wonderful. The extras can be frozen in quart size freezer bags (3 will fit in a bag) and heated in the microwave at for about a minute to a minute and a half. You can add chicken or pork or any other left over meat to the mix as well!
