In an effort to create an oat bran muffin that was edible, yet as low in sugar content as possible, I've invented this recipe. I continue to tweak the ingredients each time I make them and I've list some of the replacement ingredients that can be substituted if desired/necessary.
This is a recipe I've created just from looking through my pantry, freezer and spice cabinet. I would imagine this could be "personalized" in endless numbers of ways per the preferred tastes.
This recipe can be custom made to anyone's personal tastes by both adding or omitting the ingredients I put in my dish. The options are as limitless as the cook's imagination. Add/omit any fresh/frozen vegetable desired - ex. snow peas/peas, green beans, spinach, etc. Crab meat or scallops can be substituted or added to the shrimp for variety.

The healthier I eat, the better I feel all around. It increases my energy and helps lift my self esteem. I like to improvise with the ingredients that I have on hand and the various seasonings for variety. I hardly ever follow an actual recipe. All of this combined makes me one happygrl . . . :)
