This is great as a meatless meal or as a side dish. I add a few extra hot banana peppers to kick it up a bit. You can reduce or omit them totally if you don't like spicy food.

This is a great way to use up your extra zucchini & yellow squash from the garden. It can be used as a side, over pasta or you can add fish, chicken or seafood to the top & let poach til' done.

The zest from both the orange & lime in additon to the chopped jalapeno give this a great flavor. I serve this with a side of brown rice & a vegetable.
Bean & Hominy Soup
This is super quick & easy to make. It's a touch on the spicy side. The aroma is fantastic. To make this a vegetarian dish use vegetable stock in place of the chicken stock.
Spaghetti Squash Pie
This dish is great when you're in the mood for Italian food.
Just serve it with a side salad.
Chinese Ginger Beef & Snow Peas
This really good when you want to make something quick & in the mood for Chinese food. You can use broccoli or any other stir fry vegetable also.

Joanie's Zippy Tomato Sauce
I used this sauce on anything from pasta, fish, chicken or vegetables. It's not overly spicy, but enough if you want a kick! To make it spicier, just add another Jalapeno pepper!

I make this quite often. It's great for breakfast . When I eat it for lunch or dinner I just add a small tossed salad.
I love this soup. It's very filling. You can have a huge portion without the guilt! There's always a pot of this in my refrigerator. You can adjust the seasonings if you want. Enjoy!
