makes 35 1 cup servings extremely kid friendly!
this was a morph of a few recipes and tweaked to lower sodium and cholesterol the sodium count maybe a little high on this since I make my own homemade vegetable stock and don't add salt to it. The carrots give it a little colour and is an easy way to sneak in some more veggies... This is a hearty soup - this and a cornbread muffin makes a great dinner!

I use all purpose gluten free flour and 6 small organic farm fresh eggs - I would add more of all the veggies next time.
Great cold too. The flour settles to make a fake "crust" and thicken.
An adaptation of my other recipe lowering sodium with different ingredients - if you cut back on the cheese or use a different brand (I used No Name here) you can possibly cut down on sodium, fat and cholesterol further - usually I add red peppers as well but I didn't have any today.
This is my take on refried beans - I use dried black beans and soak them - if I am short on time I substitute in 4 cans of black beans with liquid, but I omit the salt.
The chipotle pepper creates heat (do not minced - leave whole - for more heat add 2 chipolte peppers and or 1tsp red chillies - ground. This freezes well.
A lovely mild coconut based curry. To shorten the prep time, I run all of the vegetables thru my food processor's slicing option.

This is an adaptation of Chef Meg's recipe. It makes 4 HUGE calzone/panzerotti's so I make them into 8 smaller ones which is still a really decent sized serving, serve with breadsticks and a salad.
This looks pretty in a clear glass pyrex dish, (use orange sweet potatoes if in clear dish) is great to make ahead and pop in the oven to warm when company is there
This makes 16 small slices or 8 large slice pizza, Nutritional based on 8 slice pizza.
This is a great recipe that I came across and tweaked for our tasting. Wonderful to serve to company or bring to a function, This makes 18-20 mini cheesecakes, however you can make them into bite sized cheesecakes as well - just reduce the cooking time.
my home made pasta sauce I make it and can it so its on hand when I need it. Also good to freeze (i freeze it in 2, and 4 cup measures so its easy to pull out and defrost. I also do a few 1 c measures (freeze in a ziplock sandwich bag flat to save room and it will defrost faster) for pizza sauce .
My take on pizza crust - yummy - freezes well as well - This is enough to make 2 large (16 piece) pizzas (more if making a really thin crust) I divide in half after its risen and wrap 1/2 in plastic wrap and freeze for a later time. To use later - thaw in fridge, and roll out.

This is a great yummy chicken - I use a very very cilantro homemade salsa for the salsa but you can use a hot or med in place of it, The combo of the salsa and the peanut sauce is yummy! I use the weight watchers peanut sauce recipe and include it but you could substitute a bottled sauce.

This is a great variation on my Hashbrown casserole (see Hashbrown casserole submitted by Koolchik) - it's a little higher in fats which could be reduced by substituting turkey sausage, for the Italian Sausage, and switching out to a low fat cheese, & light mushroom soup in the Hashbrown casserole, this is just what I happen to have on hand when we got a hankering on one of those cold winter days. It is awesome to serve for breakfast as well - good 'ol comfort food. We eat with steamed broccoli and a salad.

This is also great if you do 1/2 chicken and 1/2 shrimp. Green Beans are awesome in this dish and I don't even care for them normally! Makes a great one pot dish, better than take out! This is a double recipe and freezes well - I make some for dinner and freeze the rest into lunch or dinner sized portions and reheat in microwave once thawed. YUM!

You can use this as a taco sauce as well. Its mild the way its presented substitute in 1-2 TB Chipotle chili powder for the chili powder for a bit more of a kick.

I rub the outside with EVOO and then sprinkle with sea salt - the calories would be adjusted down as would fats and sodium if you do not do this or if you do not eat the skin.

This is a great way to use roast left overs as well - I have added the roast beef cut up, left over mashed potatoes and like to save the gravy(I freeze it) but this is the basic recipe using good ol ground beef.
I found this recipe somewhere and tweeked it a but for our liking. This is a tasty white chili but can be spiced to taste by adding jalapeņo pepper .This is best cooking on low for 7-8 hr - too short and the beans won't break down enough to thicken the chili - can use turkey leftovers in place of chicken as well.

This is a total crowd pleaser! The sweet potato along with the white wine vinegar and bacon makes it seem like its full of cheese but there ins't any! YUMMY we server hot or cold. It tastes like a twice baked potato 8 smaller servings or 6 larger servings
This is great - we made it on the BBQ in a grill safe pan. This is a fave! We've also made this with red pepper strips as well.
These taste like twice baked without the fuss - can add green onions shredded to top if you want. So easy and yummy!

this lasagna is best made with fresh pasta not the dried or no cook kind. freezes well too - this recipe is for 2 - 9X13 lasagna's, can add spinach to ricotta mixture as well if you want
it s a bit higher in fat but a nice treat with some crusty bread and a salad freezes well and you could reduce fat by using fat free ricotta (although I have never tried it) or substituting ground turkey etc

Just banana muffins - you can lower fat but substituting unsweetened apple sauce for the oil. (I just didn't have any) and add raisons or choc chip or nuts as desired (not accounted for in recipe)
A combination of other people`s recipes plus a bit of my own. Spice meter can be cranked up or lowered down by you as the temperature is controlled by the chipole pepper.
This recipe makes 2 quiches with shells, I add 2 oz skim milk moz. cheese to one and 2 oz of goats cheese to the other - I've done the nutritional comparision and it is only a 5 cal difference between the two and less than 1 g of
fat. This recipe I calculated using 2% milk thickened with cornstarch or flour but I have thickened skim milk in the same way and you can save on a few more fats/calorie. I used peppers, portebella mushrooms, green onion, bacon and cheese but you can use any veggie you want - i.e. zucchini, tomato, spinach etc...
This is a great recipe with or without feta cheese (my family perfers no feta 'cos feta can be stinky when it cooks) - fast to prep, I like it served with a mango chutney or salsa topper. (not included in the nutrition of this recipe) and served with brocoli salad

Got the idea from someone else's recipe and added my own spin to it. This will serve 8 with a salad and side(we like it with grilled veggies) and optionally a side of sour cream and salsa (not accounted for in recipe) and there will probably be left over beans. Heat the beans and serve as "dip" with nachos or veggies or to top a salad. To decrease the fat, substitute in a lower fat cheese - we just didn't have any when I tried this, this recipe calls for 2TB of cheese for each torilla but you can also cut that back to 1 TBp to save on fats.
Easy to throw together and in the oven at the same time as some chicken serves 6 smaller servings, or 4-5 decent servings. Vegtable broth may be substituted for chicken broth or omitted all together.
