I make an entire bag of black beans at once, split into 1/2 c. servings and toss in the freezer. I do the same with rice. This quick lunch can be thrown together in under 5 minutes. It is also VERY filling.

Taken a fruit pizza recipe and lightened it up by substituting fat free cream cheese, cool whip free, and making individual servings by making cookies and topping it instead of making a big pizza with slices.
