This receipe came from "The Essential Eating Well Cookbook"
Great way to use left-over turkey, or use chicken. To shorten cooking time, substitute quick-cooking barley for pearl barley; add carrots and parsnips with the barley and simmer the soup for about 20 minutes total.
Note: The prep time includes making your own broth
This is a freezer meal that makes 3 entrees, 4-6 servings each. I based the calorie count on 5 servings.
