Spaghetti Squash with White Beans Provenšale Take 2

I found this recipe online and modified it. Its easy, healthy and tasty, so I thought it belonged on SP. The original uses cooking spray and omits some of the herbs.

Meatless Obama Chili

This is a version of the widely circulated Obama Chili recipe. It subs meatless soy crumbles for the ground turkey in the original. I double the spices because the soy version seems to require it. I add 3 tbs ketchup to all Obama chili- try it!

Spicy Black Bean Salad (corn free!)

This recipe is adapted from the Nutrition Action Healthletter June 2010.

The original recipe uses 1 jalapeno instead of the crushed red pepper and omits the cumin and garlic. I misread the recipe and blended my avocado the first time. I like it that way but if you wish, you can chop the avocado and make the dressing separately.

Dijon Dill Salmon Salad

A yummy salmon salad to serve over greens or on a sandwich. It is very nice on slices of cucumber. Feel free to eyeball/ taste test amounts of ingredients. I did- had to estimate for a written recipe.

Couscous and Veggie "Pasta" Salad

I mixed this up from a leftover couscous dish and leftover vegetables. I liked it so much I now make it on purpose. The seasonings might seem incongruous, but they work together well.

Note- I prepare the whole bag of couscous with the onion and spices, then we eat half as a side dish and I make the salad with the rest. Nutrition and recipe counts are for half the bag. I left the whole onion and whole amount of spices and olive oil so you can make the whole bag. Thus your actual calories for this dish will a little lower than documented.
