This recipe was an experiment that took me by surprise with its deliciousness! It tastes just like the EP I used to make with breadcrumbs, flour, and real cheese.
To make this gluten free, just be sure to use a gluten-free sauce.
For best results, plan ahead so you can sweat the eggplant before starting food prep for this meal.
I needed a good source of high protein that also tastes good enough to drink, and this is great! tastes like a peanut butter-banana shake. The Pea Protein powder is also gluten free and tastes great in smoothies!
This was an invention of my knowledge that I needed certain nutrients for dinner to round out the day, and a scoping out of what I had in the fridge. I was so happy with how it turned out, I need to post it!
