Chickpea Salad

I tried this at a local market that sells a variety of foods that they prepare - this is my work in progress version - I still don't have it quite right but it tastes good and almost any type of bean works in it. added bonus - the vinegar (or maybe the parsley) seems to prevent the unpleasant after effects of the beans (at least for me).

Chocolate Chip, Oatmeal and Bean Cookies - Food.com

This recipe is from Food.com. I had found and successfully fed my family a chocolate bean cake and wondered if there was a bean cookie that they might eat. Turns out that this is pretty traditional as far as ingredients go but at least these cookies have some nutritional value.

I cut the brown sugar back to 1 cup and the cookies were still sweet enough. Next time I may try cutting back on butter (maybe by cooking my own beans and adding the equivalent of 1 1/2 cans worth and no butter)

High Fiber Chocolate Cake with a Protein Punch

I know this is going to sound incredibly weird but this recipe makes a tasty cake using beans, eggs, chocolate and baking soda - you can add a little sweetener if you wish but as I have radically cut back processed sugars in my diet I find it perfect with just the sweetness of the semisweet chocolate. Sorry for the metric measurements - I got this from Pinterest and since the beans I used had started as dry beans, I used my food scale. I'm guessing that 200g is close to what you would get if you drained a can of beans.

A delightful Mexican trip for your palatte. Buttery Avocado and Mango topped with a Chile lime dressing and served over bibb lettuce. Bacon, toasted pumpkin seeds and gorgonzola are an added taste treat.
