Saute onion and veggies in olive oil. remove from heat. Brown orzo in skillet. Add enough water to chicken stock to equal 4.5cups. Add all ingredients to 9x13 pan. wrap with foil, bake a 400 degrees until all moisture is absorbed (about 60-90 min). Remove from oven and fluff rice. add parsely.
