This is a recipe that I understand is for very very authentic Avgolemono. Having not been to Greece I can't speak to that, although having made this recipe I can say that it tastes perfectly consistent with the lovely soups I've enjoyed in Greek diners in the Northeast. Note that this recipe differs from all those already posted by the separation of the egg mixture and frothing of the egg whites.
Gluten-free, casein-free stew. Yum!
Made this up as I went along tonight, needing to eat the entire day's carbs without adding a ton more fat or protein, as I was there already.
This is how I make Guacamole at home -- it is not a studied or authentic version, merely how I like it!
If you are following a Gluten Free diet, make sure you check your brand of Worcestershire sauce to ensure it does not have Wheat or gluten in its ingredients. Heinz happens to be one gluten free brand.
I modifed this a little bit from a recipe found on the internet, mainly to make it both casein free and baking-machine capable. Instructions also included for regular oven baking.
Inspired by a recipe from SeriousEats.com, but radically modified to make gluten free as well as to use ingredients I had on hand
Kevin and I made this for dinner on 10/28/09. Both of us absolutely LOVED it. One change we would make is to omit the onion in making the orange-olive relish.Another note: I have found this recipe in two places - one was as the winner of the 2001 National Beef Cook-off (Priscilla Yee), and in Carol Fenster's 1,000 Gluten Free recipes book. (I like to give credit where credit is due)
I have modified this recipe from the original found at www.landolakes.com, to make it also casein-free. if you don't have to worry about dairy or casein in your diet, you can go ahead and use 3/4 cup real butter. I also reduced the amount of chocolate chips from 2 cups to 1 1/4 cups because that's all I had on hand when I made them.
Also, I successfully used Bob's Red Mill All Purpose Baking Flour instead of making the separate GF Blend as recommended by Land O Lakes (see "cooking instructions" below for their GF blend recipe).
Nutrition Facts Discrepancies: My recipe program calculates the nutrition as 257 calories per cookie. the landolakes website lists calories at 130 g per cookie (See all their nutrition facts under "cooking instructions" below). And of course SparkPeople calculates the calories as 262.2 per cookie. So, take the nutrition facts with a grain of salt, or calculate it yourself to get a number you are comfortable with.
Make this flavorful dip by mixing one part Mayonnaise with one part Miso paste. Use for dipping fresh vegetables. Can also be used as a base for making asian salad dressings.
Kevin and I made this on 10/30/09 and both loved it. We devoured it! We devoured this. Serve it over rice.
