A healthier version of the popular chocolate mug cake with additional protein and fiber to lower the insulin response.
I use London Broil (top round roast) to make this recipe because it is very lean and I can easily cut off all the visible fat before cooking. I buy several roasts at a time and freeze them. When I'm ready to make hash I slightly thaw the meat so that I can dice it easily with a steak knife.
Similar flavor and texture to rice pudding without the insulin response. Makes a great breakfast!
