curry tofu salad sandwich

tofu. curry. sandwich.

does it get better?

note: i use LIGHT firm tofu in place of regular firm tofu because it's significantly lower in fat and calories without being lower in protein. i find that by the time i add olive oil and the spice mixture, i cannot tell the difference between the light and the regular.

spicy peanut butter & tofu sandwich

if you like spicy peanut buttery asian food, you'll like this sandwich.

note: i use LIGHT firm tofu in place of regular firm tofu because it's significantly lower in fat and calories without being lower in protein. it doesn't really taste any different.

avocado, tomato, spinach sandwich (quick & filling lunch!)

this is a quick and easy lunch. it's also one of my favorites! don't be afraid of the fat; it's healthy fat from grapeseed oil and avocados.

vegan grilled cheese

a quick, easy vegan grilled cheese. no grilling required! you just need a toaster oven, and optionally, a microwave. skip adding all that extra fat without sacrificing much taste.

you can find vegan cheese slices at most health food stores.

vegan turkey & mayo sandwich

a quick high-protein lunch.

you can find Tofurky and Vegenaise at most health food stores. they even sell Tofurky slices at Trader Joe's now.

the nutritional info is for Vegenaise, but you may sub whatever condiment you prefer.

Incredible! (3 ratings)
the best vegan mac & cheese! EVAR!

the best vegan mac & cheese you'll ever eat. good for you with hidden veggies! and no yucky nutritional yeast sauce!

basic scrambled tofu (endlessly customizable)

i've tried every scrambled tofu recipe under the sun (i've perused about 5050 vegan cookbooks, magazines, and recipe blogs)... and this is the BEST basic recipe i've found.

the spice mixture is tasty, but it does not give any type of overpowering flavor which would prevent you from adding whatever you'd like to the base.... you can add whatever veggies you have on hand. i tend to use scrambled tofu as a great way to clean out the fridge of veggies about to go bad!

note: i use LIGHT firm tofu in place of regular firm tofu because it's significantly lower in fat and calories without being lower in protein. i find that by the time i add olive oil and the spice mixture, i cannot tell the difference between the light and the regular.

do not believe the hype: vegan lunch is more than peanut butter and jelly sandwiches and raw carrots! don't believe me? -- check out this cookbook.
