I love a good dessert but don't trust myself with leftovers from a large batch recipe so I came up with this recipe which makes enough for my family to have one each and no tempting leftovers. Also with just one carb per serving, no added sodium from leavening agents, and less than 150 calories, it works into my menu plans wonderfully.
Tasty & colorful, this dish is something my family likes that also meets all my dietary restrictions: low sodium, low carb, no more than one serving green vegetable per day. I so miss soup & salad lunches. The zuchini will cook down and thicken the soup without the need to add a thickener/additional carb.
Low sodium, low fat, fairly tasty. Uses a lot of fresh vegetables & is always good with more added. Extremely filling.
