This recipe comes from an old family friend. It was originally made with veal, but I don't eat veal so we make it with turkey. It's nice served with brown rice and a side salad.
This recipe works every time, comes out light and perfect for sandwiches or toast, and can be modified in many ways.
My husband invented this low fat, high fiber recipe. I named it confetti beans because all the vegetables make it so colourful. I serve it over brown rice. It can be made vegetarian by substituting vegetable broth for the chicken broth. You can use other types of salsa, but we recommend one with fruit because it adds a little sweetness to the dish.
This is a low-fat version an old traditional recipe. It makes a great morning hot cereal that tastes like pumpkin pie! It's not sweetened so you may want to add some brown sugar or honey on top.
