Super Moist Pumpkin Spice Cake

I made this in a 9 x 13 and iced 1/2 the cake. I figured my husband would want icing and I would eat it it w/o. It was so moist you didn't need icing! I put a piece in the microwave for a few seconds and then put a bit of cool whip on top, Yum! Next time I will make it in muffin tins.
