I usually microwave red potatoes (around 2.5 minutes per potato), but some occasions call for a little more flourish :-)
This soup is drop dead gorgeous, with yellow background, floating orange carrots and bright green peas. Tasty too--spicy but not hot.
This is a creamy soup that will leave you satisfied and is very easy to digest, though a drop of Beano might be advisable because of the cabbage, I give directions that degas beans for the most part.
See my chipotle peppers in adobo sauce for how to make it, or you can buy it canned.
Just basic chicken soup, but comes with directions to make chicken broth. I mostly make the soup when I am recovering from a cold--it is pretty plain, but sometimes that is exactly what is called for.
Chipotle chilis can be found with the other dried chilis in markets that cater to Southwestern cuisine. They are smoked and dried jalapeno chilis, so they are hot, but so flavorful that just a bit of this will brighten up a dish--especially good with chicken. Despite that the peppers are Mexican, this dish is more Filipino (though everyone loves it :-).
