Mama's Italian Pot Roast

Per Janice's recipe. A great, flavorful vegetable base for beans, slow cooking, stews, soups, what have you.
This slow cooked chicken is great for tacos or served on own! I served it in a flour tortillas topped with shredded cheddar cheese and fresh guacamole for my husband, and for myself I served it over quinoa and topped it with the guacamole (pictured). Super filling and satisfying.

Tuna fish with hard boiled eggs and mayonnaise and mustard. Great as a sandwich or with crackers or vegetable sticks.
