Very fulfilling. If desired, reduce salt by using low salt broth and tomatoes and limiting parmesan cheese. Reduce fat by choosing a meatier salt pork. Very simple after everything is chopped.
Healthy and full flavored. The ground fennel really adds a great twist. Can be served over spaghetti or rice and sprinkled with Parmigiano-Reggiano (not included in Nutritional Info) but just as good and healthier without them. Tastes even better the next day.
Great flavorful broth with lots of veggies. I like Jimmy Dean sausage best because it has much less fat. You can also rinse the cooked sausage with hot water to remove more fat.
