BLT Soup (crock pot or slow cooker)

Love each of the B, L, and T components of a BLT, but can't eat gluten, and can't stand mayo. Thought of a BLT soup/stew, and figured, why not!! Used turkey bacon and napa cabbage in place of the traditional bacon and lettuce.

As written, this recipe is gluten free, low in fat, and less than 150 calories per [large] serving!

Low Carb EASY Pumpkin Bread

Simple ingredients, simple instructions, and delicious and friendly for those following a low carb diet. Looking at the ingredients, you can tell this *wont* be super sweet, but it is great with a scoop of slow churned vanilla ice cream, or greek yogurt!

Cheesy "rice" and broccoli

Uses shredded cauliflower in place of rice to lower the carbs and calories. First time I made it was really BLAND, but remembered to add seasoning second time around and tasted much better!

low cal high protein vanilla coffee shake

A delicious (and huge!) 14g protein shake for less than 100 calories!

Tropical lime shake

The ingredient database didn't have Xanthan gum or coconut extract.. but those calories are pretty minimal. At most you are looking an 80 calorie bowl of deliciousness :)

layered pumpkin cheesecake (crust optional!)

I love anything and everything pumpkin, and I love cheesecake! Unfortunately, being a volume-eater, I want to eat 1/4th of the pie! ;) This healthy dessert will let you do that without setting your diet back.

Low Cal Pumpkin Fiber Muffins

Didn't have any type of flour on hand so I ended up using a mix of ground Fiber One and Hodgson Mill Oat Bran cereal. Honestly haven't tried these yet - they're cooling on the stove right now. Came out smaller than I expected, but looks like I can have about 3 for the "price of one" so I'm OK with that. They're super moist and almost a bread pudding like texture.. might not work for some people, but I love them!
