The basis for this recipe came from http://www.athousandsoups.com/. I've changed it up a bit, though, using chicken instead of pork and leaving out the fried egg roll wrapper strips.

The trick is to use blended cottage cheese in place of the ricotta for a HUGE protein boost...
The low-cal, flavorful pesto sauce and grilled chicken and sweet peppers in these wraps make it SO GOOD. And SO HEALTHY! What a wonderful lunch! I usually eat both wraps at once and it's still right at 400 calories.
Borrowed the basic recipe from someone else on this site, but changed a couple of ingredients to make a bit healthier for my family.
WOW! Only 55 calories per serving and still so delicious! This recipe is SIX ingredients and HALF an HOUR. Perfect for a speedy lunch or dinner and you'll still have some left over for later (unless you eat the entire pot, which would still be only 330 calories).
