Sausage, Spinach, and White Bean Ragout

Found this in Cooking Light Magazine. My husband has grown to love fresh spinach, but it can be substituted with mustard greens or escarole if you prefer a more pronounced flavor. Although categorized as a soup, you can decrease the amount of broth and water and serve as a more traditional ragout.

Homemade Mild Turkey Sausage

Turkey sausage can be a pain to find at the grocery here. It often requires a 45 minute trip to the organic/fresh food markets in larger cities nearby. I found this recipe for loose turkey sausage (that is called for in several recipes I have) on recipezaar.
