Low fat and delicious, I adapted this recipe from a more fattening one to replace the oil with applesauce and extra banana.
Recipe adapted from one on WholeFoods website. A steaming bowl of this is said to bring good luck for the coming year, but you don't have to serve it only on your New Year's menu. Liquid smoke and vegetables add depth of flavor to simple black-eyed peas and rice.
This is an easy way to make scrambled eggs healthier and tastes great!
