Recipes I've Shared:
Delicious, filling, and nutritious! Great for right after a hard workout to replace lost electrolytes.
Simple but tasty! Serve with lite soy sauce for dipping.
More veggies, less meat! Courtesy of Cooking Light magazine, May 2010. I used beef, because it's what I had on hand, but they recommend lean ground lamb.
If you like a thicker, chili-like stew, follow the recipe exactly, but if you want a thinner, more soup-like consistency, just add more water!
These are delicious, and I love leaving the skins on for that extra punch of fiber and nutrients!
Delicious stir-fry vegetables and asian flavors.
I love skin-in potatoes, so here's simple recipe for low-fat mashers!
I was delighted to find that low-fat cottage cheese makes a perfect substitute for ricotta and doesn't taste "low-fatty" at all! I left out most of the herbs and spices I used (mostly Italian) so you can do-it-yourself.
I can't stand Velveeta cheese, so I wanted to try to create a lower-fat recipe for mac & cheese with a real roux-based white sauce. This is a small recipe, but with careful portioning, you can double or triple the recipe to feed lots of hungry mouths.
