Low-fat Lasagna

I was delighted to find that low-fat cottage cheese makes a perfect substitute for ricotta and doesn't taste "low-fatty" at all! I left out most of the herbs and spices I used (mostly Italian) so you can do-it-yourself.

Basic Macaroni and Cheese

I can't stand Velveeta cheese, so I wanted to try to create a lower-fat recipe for mac & cheese with a real roux-based white sauce. This is a small recipe, but with careful portioning, you can double or triple the recipe to feed lots of hungry mouths.
