These versatile munchies are great for a Superbowl party or for a dinner party. These broccoli bites have just the right balance of broccoli to "other things" that makes you totally forget that you're eating broccoli at all. All my kids like them...Even my husband likes them.
As always, try to use the freshest ingredients as possible, locally grow...organic is even better.

Yummy stuff...even my picky kids like it. I do put a tiny bit of butter cream icing on it for them. However this recipe is without the icing as a topping. It is a very moist and filling bread...will stick with you until lunch!

This recipe can be added to for a variety of different flavors.
I have fried these and I have also baked these patties. I believe I enjoy the consistent results of baking. It is hard to get the fried ones to not burn, yet cook all the way. I have included the directions for both ways. Also...this recipe makes about 16 patties. I bake up lots of these guys and freeze some of them for a super quick dinner. There is a lot of prep time...but remember this is for a very large batch...you can always cut the batch size down. Before you start this recipe make sure you have enough time...as you need to place the mixture in the refrigerator for an hour or so to "set up".

To make this recipe healthier you could try to use some type of light butter or spread. I should try it but I just don't really trust the recipe to come out good. I just stick with using my organic butter because I don't know enough about all these spreads and stuff. If you find a substitute for the butter that works for you...please let me know!
My kids and I both LOVE these. I hope you enjoy them too!!!
This recipe makes around 32 muffins. I always freeze the extra for later.
