I converted a buttermilk pancake recipe into a filling treat. Whole grains give the pancakes fiber and protein, there is no processed sugar, and I use yogurt and milk because it is what I always have on hand. We often eat these for lunch!
I keep "oat flour" in the fridge. Just grind oats in a blender or food processor. I use 1/2 oat and 1/2 whole wheat flour in most of my baking recipes.
