I had to make do after I sent my husband to the grocery store (uh oh!). Unfortunately "organic" and "low sodium" mean the same thing to Hubby, haha. So in order to reduce the sodium, buy the low sodium beans! \
Also, this is a cheat meal. If you'd like to reduce the calories, use small tortillas instead of burrito sized. Enjoy!
This recipe is slightly varied, but copied from the recipe titled "Spaghetti with Arugula Pesto and Seared Jumbo Shrimp" by Giada De Laurentiis per Food Network and I have created this modified recipe for my own personal tracking purposes.

Nutritional Info includes 1 serving, however in my ingredients list I will include the entire recipe (serves 4). Sodium is high, however I drain and rinse my beans so I know this lowers the sodium more than listed. Dairy products also add sodium, so those can be eliminated. I try to use this as a dinner after a low sodium day (that way I don't exceed my daily limit of 2300 mg). ENJOY!

This is a great light summer veggie salad. Not a lot of prep, just dicing. Best when chilled overnight and served the next day. I like the strong flavors of onion and vinegar, but if the listed amounts are too much please feel free to change them to fit your tastes.
I make this recipe and separate the skin into two halves. I eat one half as an entree and freeze the other half for later.
Great low-fat, low-soduim dish for parties, potlucks, or casual at-home dinners. Wonderful when prepared with pulled pork tacos. Can also be used as a dip for chips.
I love this as a low cal low fat snack. Even my two year old drank it right up. Great way to get a serving of fruit!
I love getting these ready-made crusts and topping them with whatever I have on hand. Endless substitutions could be made!
