This fits into a low carb diet unless you are in the induction phase.
Jicama seems to stay slightly crunchy even after steaming. Use a shredder or pulse it in the food processor to make "hashbrowns". Cook it with the sausage. You could stop right there and eat it just like that. Or serve it with eggs on the side. Really yummy.
25g of protein and less than 300 calories for a nice size serving.
Used Turkey drippings (minus the fat) plus a large handful of the meat.
Easy to make, tasty and nutritious.
