These taste good and are made lighter with applesauce instead of oil. My family loves these.
These are really good, and really filling. The recipe actually calls for oil, but I made them healthier by swaping the oil for applesauce. You can cut the sugar down a little more if you wish, I use under a 1/4 cup and they turn out fine. The original recipe also calls for regular buttermilk, but I chose lowfat to make it healthier. Recipe is supposed to make 8 pancakes, but I usually get 10-12 depending upon how big I make them. So I chose to put the servings at 10, which is one pancake each. So if you eat two pancakes each then it actually will serve 5-6 people. Or if you are like my kids, who the first time they ate this they ate 3 pancakes each, which meant I only got 1, my baby got 1, and my husband didn't get any! Anyways, they are delicious! Prep time is approximate, I didn't really time myself. The original recipe didn't have a prep time. Cook time is per pancake. Also note that I didn't measure out the batter, I just pour it onto my griddle until I get a pancake at about the size I want. So you may only get 8 pancakes by measuring, but I got 8 the first time and about 12 the second time I made it.
