Just chopped fresh veggies, crumbled feta toss with dressing of your choice and you have the best healthy, greek salad.
I use the ham bone left over from Christmas Eve dinner and use dry beans and whole bay leaves, not crumbled.
You can add chopped cucumber, chopped green/red/yellow peppers, olives, etc, your choice
I created this to obtain a butter that is low in salt and contains healthy olive oil. Make sure you use a light olive oil.
I came up with this as we needed a dish that was healthy for a cardiac and diabetic patient and still tasted like a treat.
Sometimes I just cannot handle the thought of any meat but my husband loves ham in this dish, so I make the dish without the ham bone and trimmings, then divide the soup in half and put in the ham bone into 'his' soup.
I equate 1 cup of finished soup as 1 serving.
Love this breakfast and a great way to get in a lot of good nutrients to start you day!
