Berenjena Guisada con Bacalao

Eggplant and salt cod is one of my favoirite meals that I load up with lots of onions, bell peppers and tomatoes. If I don't have tomatoes, I'll do with out.

I usually serve with either, plain polenta (harina de maiz or funche), boiled Carribean root vegetables, like green bananas, taro root, mountain yam, pumpkin (calabaza), breadfruit, malanga and, tanier to name a few.

Carmine's Marinara Sauce

This marinara sauce recipe is from Carmine's Family-Style Cookbook which is used in many of the dishes served at their famous Carmine's Restaurant in New York.

Make this sauce ahead of time to use in your favorite Italian recipes. Keep plenty on hand and freeze it for future use.

Corn Egg Drop Soup

Quick and easy soup for 1 or 2 people. Just add 1 serving high fiber bread.

Broccoli Rabe sautéed in Garlic & Olive Oil

I took this recipe from Carmine's Family-Style Cookbook and reduce portions in half.
