Paella

Taken from a Diabetes cook book and modified for what I had on hand. Add additional red pepper if you like it spicier. Also, some fat and sodium can be eliminated by using a low fat sausage and a low sodium chicken broth.

Makes approx 12 generous 1c servings.

Originally an appetizer. I increased the recipe, designed a sauce, and used it as the main course served over rice. Rice not included in nutritional information.

This is the shortcake for use in Strawberry Shortcakes. This only includes the information for the cake, and not any strawberries or topping.

Chicken Curry


Modified recipe from a coconut milk can. Makes 7 1c servings. I used frozen vegetables. If using frozen, steam them ahead of time, or use fresh and just add them in at the appropriate time.
