This is a low fat version of my Italian Grandmom & Mom's Chicken cutlet.
Cut chicken into tender size pieces.
Mix all other ingredients togeather except for bread crumbs.
Pour over chicken & mix to cover all of chicken. Let sit at room temperature for 10 minutes.
Bread chicken with bread crumbs.
Spray cookie sheet with oil spray & place chicken one layer 1 each apart.
Low fat & Low calorie
I add any tomatoes I have in the house.
Just like Mom's & A good size portion to fill you up.
This is an easy one pan meal that bakes right in the oven. My father's original reipe called for about a 2 tablespoons olive oil & stick of butter. I lighten it up by omiting the olive oil keeping a small amount of butter.
My Mom used eggplant sometimes too.
Chopp tuna add all other ingredients. Mix well
This is a great quick low calorie breakfast that I can make in 10 minutes in the morning.

A lighter version of Grammy famous Crabs & Spagetti.
Pre-heat oven 400 degrees.
Mix all ingredients. Form 4 oblong chop steaks. Place in baking pan that has been sprayed with Pam.
