Lentil Stew with Oats (1/2 cup = 1 serving)

From Slovak Cookbook. Makes about 5 cups.

Potato Bread (+Gluten+Soy flour)

Adjusted to give better rise and nutrition. Mealy potatoes (Russett, baking potatoes are needed. Do NOT salt the cooking water. Sweet potatoes can be substituted for regular potatoes.

Loaded Potato Salad (4 servings)

Home made potato salad similar to Lowes foods "baked potato salad", but healthier
Notes: I used full fat Cheddar and Sour Cream, since I did not have lowfat in the house.
