This is a take-off on beef stroganoff. You can use any meat in it, beef, chicken or pork. With this recipe I used left over pork roast.
My Mom always made fried green tomatoes, fried in crisco and butter. I still love them and decided to try to fix them healthier. This recipe is what I came up with, which for me is a good replacement, of course not quite the same, but still has the fried green tomato flavor and similiar texture.
