healthy french toast made with sprouted bread, an egg and a dollop of greek yogurt. use sugar free syrup

cream of chicken soup

delicious cream of chicken soup for a bariatric post surgery diet

2 cooked and shredded boneless, skinless chicken breasts
1 c. finely diced, celery, onion and carrot
3 tbls. butter
2-3 tbls. flour
5-6 cups milk
2 small potatoes peeled and diced and parboiled
1 c. frozen peas
chicken broth for thinning soup as needed
2-3 chopped cloves of garlic if desired
2-3 tbls. chopped fresh parsley if desired

melt butter in a large stock pot
add celery, carrots and onion and saute
add flour to vegetable and butter mixture and cook over a medium heat stirring constantly for 3-4 minutes begin adding milk and stirring all over a medium heat
let cook gently until it begins to thicken, then add shredded cooked chicken and peas. Continue to cook on medium low heat stirring frequently for about 20-30 minutes or until done. Add stock to thin if necessary. If using garlic, add to sauteed vegetables and add parsley as well.

Puree if necessary in a blender in batches.
