Beefy Mushroom Rigatoni with Fontina Cheese Sauce

This is orginally Emeril's Beefy Mushroom rigatoni with Gorgonzola sauce, I do not like Gorgonzola so I use fontina because its creamy but not sharp. I also replaced the heavy cream with evaporated milk to make it lower fat.

Real Chicken Parmigiana

There are several chicken parm recipes out here, none of them authentic and all using jarred sauce (a crime in my home), many had no garlic or seasoning whatsoever. It may not be lower fat but there is no added sugar. I make the sauce first in a huge batch that I can save and freeze for pasta. I make two trays of the parm one for now and one to freeze. I am not gonna lie this is time consuming but results in plenty of leftovers.

Flounder with Pomegranate Vinaigrette

this is a recipe I picked up at sunflower markets. it was orginally written for grouper but its so hard to find in colorado that I use flounder

Sausage Linguine

This is a dish I developed and can be done with white fish, chicken or sausage.

Za'atar Meatballs with Tzatziki Sauce

This recipe is courtesy of savory spice shop, za'atar is a middle eastern spice blend and is yummy! traditionally these are made with lamb, but I chose ground chicken. You can use lamb, turkey, and next time I may try buffalo.

Saffron Orzo

This pairs with my Scallops in Saffrom Wine Sauce, its also a dish that is good alone for lunch. You can also add asparagus.

Simple way to prepare scallops, goes well with my Saffron Orzo recipe and uses several of the same ingredients.

Italian chopped Salad

First chopping your veggies small really does make it taste great, two I'm italian so writing measurements is a stretch especially for a salad. I also love vinegar so my vinegarette has a higher ratio of vinegar to oil. Lastly, if you want to make this a main meal add proscuitto, or tuna, salmon, chicken...whatever. Chop everything really small (i will not put that in the instructions.)

Wolff's Kasha Breakfast Pilaf

This is a blend of roasted buckwheat, eggs and veggies. I really don't like breakfast food so I am always having to come up with something more like dinner.

Crab and Cauliflower Chowder

This was a recipe I picked up at Sunflower Market and tweaked. For example real crab instead of imitation (which often contains dyes and msg).
