Use up tomatoes going soft, makes a yummy sandwich spread or soup topping.
This recipe is from David Guas, author of "DamGoodSweet: Desserts to Satisfy Your Sweet Tooth New Orleans Style" and former pastry chef at DC restaurant Acadiana. I found it on DC Thrillist website. Each piece is about 144 calories and makes a pretty nutritious snack.
These carrots are yummy with cinnamon-cumin lentil dal (sometimes available prepared at Whole Foods) and basmati rice. Sprinkle it all with pumpkin seeds.
At 8 servings, can add couscous and red wine and enjoy a 400-500 calorie meal.
