Swedish Pancakes

May have a ton of butter, but man it's good! It came from a "Six Ingredients or Less" cookbook--great find! I topped with blueberries and powdered sugar...neither are included in calorie count.

On-Hand Scramble

...because I made it with what I had on hand... :-]

Egg Free Quick Corn Bread

Slight changes to this recipe: http://recipes.sparkpeople.com/recipe-deta
il.asp?recipe=152007, all because I didn't have raw eggs on hand! They came out moist and WONDERFUL! It's not super-sweet but it's tasty!

Easy Cheesy Burger PIe

This is a varied version of this recipe: http://recipes.sparkpeople.com/recipe-deta

Curried Chicken Lunch

This is also great with tuna (sub in 2 cans of chunk light tuna for the chicken).

Beery Good Chili

This came from a friend's sister and has been perfected. I don't know how much a serving is...maybe a cup?

Easy Apple Crisp

Got this from my son's daycare--it's a good recipe that the kids can help make.

Candy Corn Custard Parfait

Another Hungry Girl recipe I got. It's different from my normal desserts (that always include chocolate), but tasty nonetheless.

Chocolate Chip Cheesecake Pudding Pie

Calories could be reduced by using SF/FF pudding mix. Nonfat milk is not recommended. I just used what I had on hand (1%).

Incredible! (1 rating)
Banana Soft Serve Take on a "Mounds Bar" :-)

This is from another SP user (and it's smaller). I just made a few changes, thinking the calories would be way different, but it's not too bad! I was craving Mounds bar, so I tried this. I didn't think to add almonds for the Almond Joy take. :-P

White Bean & Tuna Salad

From Food.com. Sure does beat a traditional tuna sandwich!

Blueberry and Strawberry Compote (no sugar added)

This is a recipe on SP. When I made it, I used Splenda instead of white sugar so I wanted to see the calorie difference (original recipe has about 167 calories per serving). Half the calories! I'm guessing on the serving size since it wasn't listed from the other recipe.

Peanut Butter and Reese's Shake

Another Hungry Girl recipe--they are great. This one has less than half the calories of its restaurant-version counterpart. :-D

Very Good (2 ratings)
Easy (and not so horrible for you) Brownie Cupcakes

To give credit where credit is due, this is from the Hungry Girl email list I'm on. These are freakin' good and MOIST!

Sausage, Potatoes, and Peas

As my Spanish teacher used to say, "SOCKS" or "Eso Si Que Es"...in other words, It Is What It Is--sausage, potatoes, and peas. Breakfast for dinner!

Turkey Dogs and Noodles (plus some)

I used what I had on hand and managed to come out decently. My toddler liked everything but the tomatoes, which didn't surprise me.

Leftovers Stir-Fry

Simple ingredients and easy preparation made this a great dinner for me and my impatient toddler last night.

Quick Chicken and Veggie Stir Fry

I threw this together tonight with what I had on hand; it seemed to come out tasty! I'm guessing on some of the measurements, so you'll want to adjust as you see fit. My Italian is homemade so it may be a little different calorie-wise.

Impossibly Easy Ham and Broccoli Pie

It's a simplified version of Quiche Lorraine since there's no crust to prepare. This is from Betty Crocker's Wedding cookbook.

Healthier Meat Loaf

This is from my Betty Crocker Wedding Edition cook book and I make it at least once a month. This can also be Mexican meat loaf by omitting sage, and substituting 2/3 c milk and 1/3 c chunky salsa for the 1 c milk. Add 1/2 c reduced fat Colby-Jack cheese and one 4 oz can of Ortega chiles. Omit ketchuo/bbq sauce on top.

HG's Pad Thai

Hungry Girl's answer to Pad Thai from a restaurant :-)

HG's Baked Ziti

When you find yourself craving a hearty and decadent pasta dish, don't head out to your local Italian eatery -- make this! It's got real pasta and LOADS of flavor, plus it's much lighter than anything you'll pick up at a trattoria.

HG's Old Time Rocky Road Fudge

From HG: Fudgy goodness with marshmallows, nuts, and a seasonal special ingredient.

Hungry Girl's Thai Chicken Satay

From HG Herself: Satay is one of the best and most common orders at any Thai restaurant. It's also a pretty popular party app. But those creamy, nutty sauces and potentially oily, fatty meats could mean trouble... Get ready to cheer with joy over our take. (It's not 100 percent authentic, but we're rebels.) Check out our Hip-Hip-Hooray Chicken Satay!

Hungry Girl's Banana Craisin Bread

From HG's recipes...

Right Said Bread
After getting a BAZILLION requests for pumpkin bread, we figured it was time to make some. And after EIGHT attempts, we got it just right. Try it and see!

Hungry Girl Pumpkin Bread Muffins

Another tasty-sounding recipe from my Hungry Girl emails.
