This is a low-carb version of the tamale pie my mother used to make when I was a kid. The tasty low carb crust mimics the traditional corn meal crust so well, you won't even know this isn't the "real deal".
Bananas Foster is one of my all time favorite desserts and this is my super fast, easy, guiltless version. It's quick, healthy and tastes very much like the real thing!
Super easy, tangy family favorite of ours! Serve with whole wheat tortilla chips or crackers if desired. If you perfer a spicy 'kick', just add some hot sauce to taste!
I came up with this soup because I really missed the creamy canned comfort soups but wanted a healthier option. This soup really hits the spot for me more than the others ever did! It makes two generous portions and could easily be turned into a complete meal by adding some cooked diced chicken as well.
