Easy Tofu & Broccoli stir-fry

Sooo easy to make and soooooo delicious. It is more pescatarian-friendly than vegetarian-friendly because of the oyster sauce. You may substitute with vegan oyster sauce (made with mushrooms).

Serve this over rice (I did not include calorie info for rice in this recipe).

Vegan Spaghetti Alfredo

I'm only posting this recipe because I want to track what I ate yesterday. I didn't particularly enjoy it although many, many other people liked it. I just hate hate HATE the taste of soy. Actually, I thought the recipe was kind of gross. Again, other people DID like it though. If you're going to try this, you may want to add a buttload of salt and nutritional yeast. Ugh. Otherwise, don't bother and use my linguine alfredo recipe. That one is A+.

Vegan Linguini Alfredo

A darn delicious vegan version of everyone's Italian favorite! Credit to Skinny Bitch in the Kitch (Rory Freedman and Kim Barnouin) for this recipe.

Chicken stir fry with vegetables and ginger (Khmer-style)

Takes some prep work, and probably not VERY healthy, but soooooooooo delicious! Make this on a "cheat night" or for guests or something. :-) The great thing about Cambodian/Khmer stir-fry is that it can be tailored to your preferences, so you don't have to follow this recipe to a T. Add in whatever vegetables and other sauces and stuff you might like or omit whatever you want from this recipe. Serve it with Jasmine rice.
