An adaptation of my Grandma's banana but bread in an easily measurable form. You can add nuts if you'd like. Just make sure to adjust the calorie count.
A simple salad, great for picnics!
You can add other things as well. Red onions add color and flavor (not included in nutritional info)!
This is one of my favorite "easy dinners'. Made with the thin sandwich rounds instead of the buns, this cuts calories, and the spicy brown mustard gives the burger the kick you want!
This recipe came from a blog called Closet Cooking by Kevin Lynch. I tweaked it a little to better suite my dietary needs, and it is awesome!

This recipe *is not* completely vegetarian (it includes fish sauce). If you're ok with that, it is an absolutely delicious version of Pad Thai. Enjoy
