A non-sweet zucchini muffin with a good texture
I adopted this from a cheese package to make the ingredients gluten free. I also reduced the amount of meat.
Easy to make and yummy to eat
A lovely combination of sauteed escarole and cannelini beans.
modified from the More With Less cookbook; this version has no meat and less salt
You may want to add more oil if you want. Also, this may taste good with Parmesean Cheese, but then it wouldn't be vegan.
