Seriously you will never believe this is so healthy! Tastes exactly like the sinful full fat version my mother makes. And its really quick too. Now I have a new go to summer comfort food!
Good served cold too!
It seems like a lot of ingredients but most things you will probably have in your cupboards.
Perfect served for lunch with crusty bread and herbed dipping oil.
I adapted this recipe from a cooking light recipe to make it more healthy and now its actually much tastier than the original! Makes 8 one cup side servings (that is what the nutrition info is for) or 4 two cup main dish servings.
So good over a salad of mixed greens, granny smith apple, cilantro, and spicy almonds. You may also substitute juice of a whole lime
This is my version of the low cal starbucks breakfast wrap that is so good but way too overpriced to eat everyday. It is so yummy and easy to make. I make the filling the night before and bring it to work to assemble
Quick easy side dish
Tasty and richly flavorful summer side dish great served with any grilled meat.
Super creamy yet almost fat free! I serve on a bed of spinach with sliced green apple and sliced plum tomato to accompany.
Great as a dip, a side, or a burrito filler.
Light refreshing and delicious
This is great as a side dish or as a main meal. One cup is a perfect portion to be served with garlic bread and a green salad.
Very spicy, so use jalapeno pepper to taste. One serving is 1/2 cup which will fill one burrito shell, or two hard taco shells. Serve with your favorite toppings. I like cilantro, tomatoes, and fat free sour cream with mine. I love this recipe because it is healthy, quick, cheap, and delicious. What more could you want?!?
Ran into a similar recipe on a cooking website but made changes to accomodate what I had on hand and I fell in love. This dish is so filling and delicious, yet the lemon lime vinaigrette makes it so fresh and light as well. Yum!
